How to make Hyderabadi Chicken Biryani?

If you do not live in Hyderabad and are missing Hyderabad's biryani, then stop missing more and make Hyderabad-like chicken dum biryani at home.

You must be thinking that this chicken biryani was heard, but why am I saying chicken dum biryani again and again? So let me tell you that there are many ways to prepare Biryani. And there is a lot of difference between Chicken Biryani and Chicken Dum Biryani. And its test is better than chicken biryani. Because in Chicken Biryani we cook half of the rice and chicken separately then we cook it together, but in Chicken Dum Biryani we cook rice and chicken together and we do not use any water to cook it. The rice is prepared by cooking the chicken itself. And one thing when making chicken dum biryani, we do not let the biryani’s boo go out at all. Perhaps it is called chicken dum biryani.

Hyderabadi Chicken Dum Biryani Recipe!

material:-
Chicken: 500 grams (large pieces)
Basmahi Rice: 250 grams
Curd: 250 grams
Onion: 3
Ginger garlic pest: 3 tablespoons
Green chili: 5-6
Mint leaves: 1/2 cup
Coriander leaves: 1 cup
Garam Masala (Long Cloves, Cinnamon Cinnamon, Small Cardamom Small Cardamom, Large Cardamom Black Cardamom, Mace Nutmeg: 2-2 pieces)
Ghee: 4 teaspoons
Oil: (for frying onions)
Shahi biryani mashala: 3 tablespoons
Turmeric powder: 1/2 teaspoon
Red chili powder: 1 teaspoon
Orange food color: 1 teaspoon
Saffron: 1 teaspoon (Here I put saffron in some milk)
Salt: 3/2 teaspoon (as per taste)
Flour: 250 grams (to seal)

Hyderabadi Chicken Dum Biryani Recipe!

Method of preparation of Chicken Biryani: -

1.First take a big bowl and add the chicken pieces and then add curd and mashala (red chili powder, turmeric, shahi biryani masala), ginger garlic paste and salt.


2. Then add green chillies, coriander leaves and mint leaves (add half to half of the leaves, we'll use them later).

3. Then take a little hot masala (long, cinnamon, big cardamom, small cardamom, javatri) and grind it a little bit (we will use half the hot masala too).

4. Now mix it well and keep it in the fridge for 10-15 minutes.

5. By then we will fry the onion. Fry the onion little by little.

6. See that our onion is roasted and ready.

7. Then we will put water to make rice on the other side and when the water gets hot, wash the rice in it and we will also put the rest of the hot spices (which were left over from us).

8. Then put a spoonful of ghee in it and cook the rice up to 50%.

9. Almost our rice is half cooked here, so we will filter out all the hot dishes from it.

10. Then strain the rice too. Here, I have already put the bowl and strainer, then filter it.

11. Then take out the chicken mixer from the fridge and put it in the pan and will fill the empty portion with the help of a spoon.

12. Then add 1 teaspoon of ghee to it.

13. After that add roasted onion and coriander leaves and mint leaves.

14. After that put a thin layer of rice on top of it. (Here we will put rice in two parts.)

15. Then put a layer of onion and a spoon on it.

16. Then add coriander leaves and mint layer.

17. Then we will add a layer of rice.

18. Now put the half of the rice in half of the rice on it.

19. And the second part will dissolve the food color in some water.

20. Then we will put onion, chaniya leaf layer over it and then put a spoon of ghee on it.

21. Then cover it and seal it with flour dough so that its wasp does not come out.

22. Then cook it on medium heat for 20 minutes. And after that cook on low heat for 20 minutes.

23. After that, remove the layer of dough with the help of knife and remove the lid (remove the lid on its opposite side so that it does not steam away).

And our Chicken Dum Biryani is ready.

Now take it out in a plate and serve it with hot lemon and onion pieces and any chutney.

suggestion:-
We have to cook rice only 50%.
Adding ghee to rice brings moisture to it and it becomes soft.
We give two layers of rice in Dum Biryani, it gives good color.

When you serve the beer, take it out from one side so that the piece of chicken goes to every plate.
